If you belong to the group of former chocolate addicts as I do, you will be always on the look for some healthier alternatives, without refined sugar but still chocolaty and sweet. A great option for this are energy bars, which are made mostly of dried fruits, which are concentrated in fruit sugar and therefore very sweet, plus nuts, seeds or oats. Unfortunately most of the energy bars in the supermarket are not really healthy and still contain stuff as corn sirup, sweeteners, sugar or glucose. But don’t lose your hope, energy bars are incredibly easy to make at home. So if you are longing for a fast sweet solution for your sweet tooth, get on the ingredients and have your longing for sweet & chocolaty covered within the next 20 min!
You will need:
1/2 cup almonds
1/2 cup oats
1 cup raisins
1/3 cup cocoa powder
4 flat tsp coconut oil
1/2 tsp vanilla powder
goji berries or other desirable stuff for topping
1. Combine almonds and oats in a kitchen machine and chop until the almonds are in small pieces.
2. Add the rest of the ingredients and mix until you have a sticky mixture, which should stick in one piece when you press it together with your hands. If it doesn’t stick together add more raisins or a tea spoon coconut oil.
3. Line a squared ca 14 x 20 cm baking pan with cling film and spread the sticky mass on it, ca 1,5-2 cm high. Put it for 10 minutes in the freezer to get it firm, then cut in pieces of desired size. Store in the freezer up to 2 months. Enjoy!
